Flourless Avocado-Choco Cookies
No Flour Black Bean Brownies
Yield: 9-12 brownies, Total time: 15 mins
1 can black beans (15-oz, drained and rinsed)
2 tbsp cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/3 cup pure maple syrup
1/4 cup coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup chopped walnuts (or nut of choice)
Optional: 1/4 cup cacao nibs, 1/4 cup coconut flakes
1. Preheat oven to 350F. Line an 8x8 pan with parchment paper.
2. Combine all ingredients except nuts, cacao nibs and coconut flakes in a food processor. Blend until completely smooth.
3. Stir in the nuts, cacao nibs and coconut flakes, then pour into the lined 8×8 pan. Spread batter out evenly.
4. Bake for 15 minutes. Let cool at least 10 minutes before cutting.
